I need to replace a ceiling fan (which includes light) with a simple light.  
How are the wire connections modified? I have two bundles of wires on the ceiling: 1st bundle: one red, one white, one black, and one bare; and
2nd bundle: one white, one black, and one bare.  
To which wires exactly do I connect the 2 wires of the light?

you should have a white red and black connected to you fan. the red should turn the fan blades. disconnect  the red and cap it off. the black is for the light. disconnect that from the fan and splice it to the black on the new light. the white is your neutral. disconnect that from your fan and connect to the white on your new light
