You might take a look at "3Dfield" which is downloadable from numerous sites. It is a stand-alone app; it applies several contouring methods including system of linear equations, triangulation, nearest-neighbor, kriging, minimum curvature. Alas, the earlier versions cost ~80 dollars; the latest one (3dFieldpro) costs $380.

I coughed up the dough and I use the tool regularly. One good feature is that it can superimpose a regular grid over the contoured function and output the grid as a numerical file which is suitable for a table-look-up.

I also like Tablecurve 3D but it is pricey.

The combination of Tablecurve and 3DField is very powerful.
