Siamese IS the breed name. What you are perhaps thinking of is either show categories or color patterns. Siamese breed cats are shown either in the traditional pointed class (dark feet) or in the snowshoe (white feet) class. Siamese come in a multitude of colors besides the original beige/brown sealpoint one. Chocolate point (brown/cream), Flamepoint (orange/cream), Bluepoint (dark and medium gray), Lilacpoint (gray/pearl), Tortiepoint (mottled seal colors), Creampoint (like a pastel calico with blue eyes), and Lynxpoint (with tabby extremities). Lynxpoints can be seal, blue, or lilac. Tonkinese look similar to Siamese but have greater variation in coloring. Siamese also come in two head shape variants: the applehead and the wedgehead, and two body types: cobby - with a bulky body and short legs, and oriental - long and lean. Hope this helps!
