How do I know when a a starter is ready for making bread? Someone gave me a dry starter. I added flour and water, it frothed and doubled in 2 hours, but I ran out of flour for baking. The next day, it dropped back to its original volume, and didn't rise, but looked and smelled good. Could  I have used it then? or do I have to wait for it to rise again?
