what is the significance of osmosis to food preservation methods like salting, pickling, drying,and fermenting?

because the concentration of NaCl is higher outside the food product than it is inside the food product, h20 will move from outside the food product to the brine solution

it's because salt solution has lower water concentration. there is a net flow of water out of the bacteria through the cell membrane by osmosis then the bacteria shrinks. at last, bacteria die.
