If it is temporary, ex: -1/-1 until the end of this turn on a 1/1 creature, does it still die?

Yes. When a creature reaches 0, it dies immediately.

The only way to prevent this is to prevent damage, or to increase the creature's health so that the -1 -1 counter will no longer kill it.

Preventing damage will not keep the creature from dying, as the -1/-1 is not -actually-damage. It just decreases that creature's attack and toughness, and if the toughness reaches 0 as a result of this, then it may die.

If you put a +1/+1 counter on a creature that is 1/1 it becomes a 2/2 so if some one attacks you and you block with the 2/2 with one counter can you remove the counter and prevent all damage that turn to that creature even thow on the card it does not say you can?
