There isn't one; it's a pun on MULTICS, the "Multiplexed Information and Computing Service", which was a mainframe system where Unix was for workstations.

Unix stands for UNiplexed Information and Computing System. (It was originally spelled "Unics.")

It doesn't stand for anything.  In 1969 Ken Thompson wrote the first version of Unix, called UNICS. UNICS stood for Uniplexed Operating and Computing System. Although the operating system has changed, the name stuck and was eventually shortened to Unix.
