My 6 month old Shih-tzu was pee pad training great, until...

My 6 month old Shih-tzu was pee pad training great, until now.  She has found a new place to go, behind the couch, and refuses to pee or poop on the pads.  We have blocked this area in every way possible, and somehow she gets back there.  We can never catch her doing it.  She does it at night, and while we're at work.  She was 15 weeks old when we got her, and the owners did not believe in crate training, which I SWEAR by.  So, I don't feel we can go back to that now.  What can I do to get her to stop?  We've tried the Stay Off spray, we clean the area well, what next?  Please help!
