JPEG compression specifies methods for compressing real life continuous tone images, either color or greyscale.

Read the JPEG FAQ, it has all the information to give you an overview. For details get the ISO 10918-1 spec. The spec is not free. But you can get an older version(1993) (not ISO standard, but a CCITT standard) from www.wotsit.org . just search for JPEG.
