1)  Preserving candy

I would like to make toffees, brittles and popcorn crunch.  Can anyone tell me what preservatives can be used to extend the shelf life of candy and for how long?

Improving the melting point of chocolate
2)  I sell toffees at craft festivals which means that I am outdoors during the summer.  Good for me but bad for chocolate.  Does anyone have any suggestions on how to prevent chocolate toffee from melting?  I was told that casaba starch or glycerin are used to prevent chocolate from melting, but I can't find any information on it.

Also, any suggestions on a tabletop candy refrigeration unit?

um mabie put a large umbrella up or get a small portably fridge  can u tell me how 2 m,ake toffie ps if yoyr wondering i typed in how 2 make tyoffies and your site came up as the first preference

you can add gelatin powder to your candy to preserve the life of your candy. ;)
