How many receptacles can I wire to one 15Amp breaker? Is 3 too many?

It depend on the power requirements of the 3 units. Remember the maximum power load on the 15A breaker circuits that would cause it to "trip" is P=EI or around 1600 - 1800Watts. If no other branch circuits are served by this breaker, then add up the power rating of each unit ( found at the back of the unit ). If it isn't greater than around 1600W then the breaker shouldn't trip when they are all on at the same time.

try this method,it's what i was taught some years ago.
  figure 1.5 amps per outlet at 80% should get you 12 outlets per circuit.
