Aside from using a spoon to hold it back,
does anyone have a good technique for making a no foam latte, especially a skinny?
I have a daily customer who makes me nuts.   She is neurotic about getting even one tiny foam bubble on her drink.   It takes me way too long to scrape everything but the milk from the top of her drink every morning.
Short of just giving her hot milk out of the microwave, does anyone have a steaming technique that will yield a drink that might satisfy this b*tch and save me anal skimming time?

When I get a soda at a fountain, and I'm impatient, I tip the cup slightly, and way overfill the cup. This lets the foam run off. I don't think this would be as useful for you, but it's an idea to consider.

Also, use a spatula, not a spoon. The spoon is way too small.
