I'm assuming that you're talking about fermented, then slow roasted, then cracked cacao bean. Which is probably the only way to eat it.

A cacao bean really tastes nothing like chocolate. It's probably closer to an espresso bean, though definitely not as strong and bitter, and nothing like coffee. The only thing that is remotely similar, ironically enough, is chocolate covered espresso beans, which you can get at most candy stores in the mall.

The after-texture of the cacao bean is also slightly different than that of the espresso bean, in that, if it's slow roasted properly, it crumbles as thin as powder between your teeth, so you won't really get a scratchy, gritty feeling in your throat swallowing it as with espresso beans. And doesn't have a waxy texture or artificial sugars that makes it stick to the pits of your molars like chocolate does.

Again, because of its unique texture, taste, after-taste, and after-texture, I'll stress that  it's strangely addictive in a way that is deeper than merely taste. (probably due to its richer, unprocessed theobromine content.) It's fairly hard to come by, but you haven't really lived until you've tried it. It makes Swiss and European chocolate taste like processed plastic. After eating it, you'll definitely enrich your palette for chocolate a lot more, in that you'll be able to differentiate between what is the essence of chocolate, and what is an additive.

I would say that the cocao been has a slightly bitter taste and a wonderful addiction
