i need to make about 5000 chocolate covered strawberries,...

i need to make about 5000 chocolate covered strawberries, and am having a problem with the accumulation of condensation on them. how is it best to store them for 24-36 hours. covered,uncovered refrigerated or not.....HELP!

Well you would need a large fridge to keep all these in. They have to be kept cool. To make it easier, wash the berries then instead of dipping them in chocolate, you can just drizzle the chocolate over them. Might save some time

After washing, be sure to dry or drain them on paper towels, first, before you dip them. Your chocolate can't be too warm. Then refrigerate them as soon as possible - don't let them sit out too long.  (Example: Fill a tray, refigerate... fill next tray, and so on.)
This will give you time to dry and drain the next batch. You must use timing and care.

i would just buy a chocolate fountain and have people dip there strawberries in it. saves you time and it looks cool too :)
