1995 Plymouth Acclaim 2.5 4 cyl auto, had head gasket replaced, why is heat gauge still fluctuating?  also coming up large hill, the gauge drops back to the normal?

Im  guessing  that  the  thermostat  needs  replacing.

Since the radiator is lower than the thermostat housing in this model, air gets trapped the upper water jacket after the cooling system is opened for any reason (other than at the radiator cap). The air must be released by removing the hex plug on the top of the thermostat housing. Once this is done, the temp guage should behave normally. Don't wait to do this as your cylinder head could warp and/or gasket could blow again if the head gets hot enough.

My mother has had the same problem with her 1995 Acclaim and has had the head gasket replaced twice.

your thermostat connector may have a short

sounds like there is a bit of air in the coolant system. gurgle the line...or just add a little coolant each day and let run. this will get the excess air out.
