Bread will go moldy because of spores that come into contact with the bread. Spores are germs that land on the bread and then begin to grow as bacteria, otherwise known as mold.

well...................Mold spores are everywhere and when they end up in
conditions that will support growth they will germinate.
In the case of bread, the nutrients needed by the mold are
present in the bread.  If proper temperature (room
temperature is good) and moisture are also present and
the bread isn't loaded with preservatives that inhibit mold
growth, mold colonies will establish themselves pretty
quickly.
