Can an opponent's spell, e.g. Mana Leak, counter your attacking creature?

No. Spells that are counters (e.g. Mana Leak) counter spells that are coming into play. Once the spell is in play, it will have to be dealt with in other ways. Attacking is not a spell or ability, and cannot be countered except by spells that specifically stop creature(s) from attacking (Arrest, Pacifism, Moat, etc).
