your valve guides have dropped due to either high mileage or high revs. look into getting your cylinder heads rebuilt. dealer will charge you a lot due to the amount of labor it takes. I did it myself for about 1000 dollars.

I experienced the same hesitation with my 92 3000 and I replaced the plugs and plug wires and the problem was solved.  I also had the smoking when it idled.  The problem was the value guides, as the car idles the oil is draining, once you accelerate it is burned off.  It is actually doing it constantly but you will only notice it after you are idling.  I had all guides replaced and that was the end of spraying for mosquitos and the burning 1-1.5 quarts of oil per 3K miles.

Zack,

I have the exact same car
and im having the same problem
my guess is the seals are going
which these motors are known for doing
thats why its smoking
and as for the hesitation it may just need a
tune up, from what I hear these cars need one every 60k miles.
hope this helps a little
good luck
